"Sassage!"

Talk about off topic discussion! I am just kind of happy with myself so I thought I'd share. Today I bought some ground pork, borrowed a friends meat grinder, got out the rest of my venison, and had a "sassage-fest"! I made 30 lbs of bratwurst. I made half of it regular and the other half spicey. I got 144 "sassages". It was my first time making sausage and they turned out great. The funniest thing is that the natural casings I used smelled just like old frozen mice before I washed and prepped them! Kinda nasty huh? lol. I am gonna have to make up some tater salad tommorrow and throw a few brats on the grill. With the strange lack of snow up here this yr, maybe I can try to trick myself into thinking its summer! If anybody has any really good methods for beer brats or any special cooking techniques, please feel free to share them.
