It was down to the 11th hour practically, the last day of the 2007-8 hunting season and right before sunset.
Matthew had been hunting at my parent's the past few weeks without much luck, nothing was moving at the times he was there or not in his location. But he decided to try an evening and about a half hour after getting settled in the blind, a couple of does walked out of the woods and right in front of him.
It's too bad it was dark by the time he got her loaded up and brought home, and by the time I found a functional camera battery he'd already changed out of his camo and put the crossbow away. I guess you can see we're not the trophy hunter type. lol
After field dressing she was 110lb, so at least the venison in our freezer is soon to be replenished. Thank you, Nature.

Congrats to you and yours for stocking up with the healthiest meat around. I haven't been in the 5 years since we moved from New Mexico to Texas.....went from a state that has about 90% open land to one that has about 10%. LOL

Congrats and eat some of that yummy venison for me. Wish I had a freezer full. Although, we do have a few packages given to us by a friend. Guess that'll have to do.
Congrats on his hunting trip. I'm glad your family eats what has been killed. I do not hunt but my husband does. He makes awesome deer jerky and the meat he cooks tastes just like beef fried steak.
I enjoy watching the deer from the deer blind and from the front porch of our family's ranch in Tilden. We usually see tons of deer. Here are a few photos taken Christmas night. It gets dark early so my photos are poor quality. We don't hunt from the house so the deer come right to the fence. There were many more deer that night but most of my photos are blurry.
Nice! We had lots of deer in our yard up until deer season started. It seems we're a good food source, lots of wild cherry and acorns, but they never stay. Most of this summer we could have gotten them from the front porch, but the opening day of deer season? Nada.
I like the steaks and roasts pretty well, but don't give two hoots about the hamburger. This year we're going to attempt to make our own jerky out of the burger that's been left lean, and some sort of sausage from the burger that's had 10% pork fat added to it. It's going to be a first for both, so if you have any good recipes for jerky or sausage please feel free to share!
For his jerky... he puts the meat in a large bowl of soy sauce, hickory liquid smoke and a little bit of pepper and lets it sit in the fridge for 24 hours before he puts the meat into the dehydrator. Be careful when adding salt if you use the soy sauce. He has made several batches that ended up as doggy treats because they were too salty when he added too much additional salt. He tests the jerky every few hours and bags the pieces as they are ready. If you leave them in too long they get hard and brittle and if they don't get left in long enough they are too chewy. He has not tried to make sausage yet. When he batters the deer meat like a chicken fried steak he lets the meat sit in a bowl of milk overnight. It takes the gameness out of the meat. I can't tell the difference between beef and deer.
